Audio to Software Notation Conversion

Greetings!

A lot of us probably use the free shakuhachi tuning program at http://www1.ocn.ne.jp/~tuner/tuner_e.html, especially the makers.  It makes me wonder if there is a way to program a "very general" version to convert incoming audio to basic sheet music for reference.

Since this existing program converts individual notes to the appropriate characters in realtime, ideally, it would be nice to elaborate on that so you could simply play an existing CD track into it, thus being converted to a rough guideline of a particular song.  Of course, many subtleties would be lost, and techniques such as koro koro and muraiki would probably lock up and explode the computer, but maybe there is someone with deep programming knowledge here that could ponder it?
